Every Wednesday from Memorial Day to Labor Day I am sharing a healthy main course salad recipe and I am calling it my Summer Salad Series. This chickpea salad has been my go-to lunch all summer long. My friend Jamie shared the recipe with me, I think she found it in Bon Appetit Magazine. It can easily be made ahead of time and I think it actually tastes better after spending a few hours in the fridge. I have been so busy lately that I have had to have a cooler in my truck so that I can eat on the road and this salad always ... Keep Reading >>

Summer Salad Series: Vegetarian Fiesta Salad
My husband Chris challenged me to post a new salad recipe on the blog each week to help motivate me to try new things and eat a little healthier this summer. I'm calling it my Summer Salad Series. I am surprised how quickly this challenge changed our dinner routine, we now have salads for dinner 4-5 times a week now. It has been my goal to find tasty main course salads that are healthy, easy to assemble, and affordable so I have been searching the world wide web for inspiration. I found this salad recipe on the Martha ... Keep Reading >>
Summer Salad Series: Grilled Chicken Pita Salad
It's Wednesday and that means today is another salad recipe for my Summer Salad Series. Today I am sharing a recipe that was featured as one of Sunset Magazine's best salad recipes. If you like traditional greek flavors you will love this salad. The original recipe used pita chips but I grilled pita and cut it into triangles for my salad (that way I could use the left over pitas for sandwiches later in the week). Ingredients2 boned, skinned chicken breast halves ( you could use rotisserie chicken to save time) About 6 tbsp. ... Keep Reading >>
Summer Salad Series: Simple Strawberry Pecan Salad
It's Wednesday and that means I am featuring another salad for my summer salad series. Today's salad has been my go-to salad for the last few weeks, a simple strawberry pecan goat cheese salad. The poolside restaurant on my Hilton Head vacation served it and I couldn't get enough of it. It is so easy to make and involves little chopping or prep which is nice. The goat cheese cuts the tang of the homemade balsamic dressing and the pinch of garlic salt gives it a nice finish. ... Keep Reading >>

Every Wednesday this summer I am going to be sharing a new salad recipe, I am calling it the "Summer Salad Series." In an effort to eat healthier dinners Chris and I made a resolution to eat a salad one night per week. Chris suggested that I feature the salads on the blog to keep me accountable to our goal which is a great idea. There are lots of fun side salad recipes out there to try but when looking or main course salads I found more of a challenge. I am looking for salads that are easy to assemble, with simple ingredients, ... Keep Reading >>
Nutella Cupcakes
I hope you all had a wonderful Mother's Day weekend! We had beautiful weather in Northern California and we spent the weekend working on the coffee table I picked up at Salvation Army and the picnic table we snagged for free. Today I am sharing a sweet recipe for Nutella cupcakes. Chris loves Nutella so we usually have a small stockpile in our pantry. One of the containers was going to expire this month so I thought I would try baking with it to use it up. I Googled recipes for cookies and cakes but this recipe from a blog ... Keep Reading >>
White Chicken Chili
I love making soup! It is so comforting and makes the perfect light dinner. I usually make a double or triple batch and freeze some of it for easy meals down the road. Recently I tried this recipe for white chicken chili using rotisserie chicken, one of my favorite ingredients. I like to pick them up at the cafe inside Calafia in Palo Alto but you can find them almost anywhere. ... Keep Reading >>
Maple-Mustard Glazed Chicken
Santa sent me a subscription to Cooking Light Magazine for Christmas and I have really enjoyed it. Last month's edition shared a mini cooking lesson on glazing with ideas for pomegranate, balsamic, or maple-mustard chicken and I decided to give the maple-mustard a whirl. For some reason I thought that glazes were loaded with fat and calories but this recipe only has 260 calories and 4 grams of fat per serving. The chicken was full of flavor and I hardly noticed that I didn't have any carbs on my plate. It tasted like it came ... Keep Reading >>
