I hope you all had a nice weekend! The weather was beautiful here. My team had to divide an conquer all weekend. We had 2 big projects to tackle on Saturday, an estate sale in Santa Clara and a estate liquidation in Palo Alto. Today Taylor wrapped up the Palo Alto project with the crew while I sold items out of our warehouse on Craigslist and took care of delivering the baby grand piano from last weekend’s Estate Sale. It’s 9am and I am finally sitting down, thank God!
If you had a busy weekend like me and didn’t have time to meal plan you’ll love today’s simple recipe. It will help kick-start your week and won’t leave you with the bloat that most Chinese takeout does. I hope you enjoy the recipe!
- 1 cup cooked white rice
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon seasoned rice vinegar
- 1 tablespoon grated ginger
- 1 tablespoon sesame seeds
- 2 tablespoons vegetable oil
- 1 pound asparagus, cut diagonally into 2-inch pieces
- 1 pint cherry tomatoes halved
- 1 pound large shrimp, cleaned and cooked
- 1 teaspoon toasted sesame oil
- In a small bowl, stir together the soy sauce, rice vinegar and ginger. Set aside.
- In a 12-inch skillet over medium-high heat, toast the sesame seeds until golden, about 4 minutes. Transfer to a small bowl.
- In the same skillet, heat the vegetable oil over medium-high heat until hot. Add the asparagus and cook until tender-crisp, stirring frequently, about 5 minutes. Add the tomatoes and cook 2 minutes, stirring frequently. Stir the soy sauce mixture and shrimp into the asparagus mixture. Cook 1 minute to heat through. Remove the skillet from the heat, and stir in the sesame oil.
- Spoon shrimp over rice and sprinkle with sesame seeds, enjoy!
