Today’s post is short and sweet (literally). I am sharing a quick recipe for simple cinnamon & pecan french toast casserole. It’s one of my favorites because you can put it together the night before, handy if you are entertaining house guests or hosting an afternoon brunch.
It’s sticky and sweet and may put you into diabetic shock but it’s worth it. Here is the recipe…
- 10-15 sliced on cinnamon toast sliced in half
- 8 eggs
- 1 and a 1/2 cups half and half
- 1/3 cup maple syrup
- 1/3 cup light brown sugar
- Topping: 1/2 cup butter, 1/2 light brown sugar, 2/3 cup maple syrup, 2 cups pecans
- Butter a 13×9 inch casserole dish.
- Mix eggs, half and half, maple syrup and brown sugar in a bowl.
- Layer slices on bread with the corners up in the casserole dish.
- Pour egg mixture over the bread, cover with plastic wrap and let soak over night in the fridge.
- Preheat oven to 350 degrees and remove casserole from fridge.
- Make topping: Melt butter on low heat, add sugar and syrup, cook for 3-5 minutes. Add pecans and pour over bread.
- Bake for 45-55 minutes, allow to rest for 5 minutes before serving.
Yum, doesn’t that look good! I served mine with warm syrup and butter on the side. Warning, this dish is not calorie free!
