I have been on a Mexican food kick lately, I think it is because it is starting to feel like spring here in California. Chris likes tacos and quesadillas (so do I) but I wanted to make something healthy that I could prepare ahead of time and freeze for future dinners. Even though it is just the two of us I try to do that as often as possible, it really helps me organize my weekly meal plan and stay on top of my budget for groceries.
I found this recipe for Black Bean Turkey Enchiladas on one of my favorite blogs and I’ve made it a few times over the last two months. I made a big batch so we could have a nice dinner before we left for our recent trip to Hawaii and I pulled an extra batch out the freezer when we got back so I didn’t have to cook.
The ingredients are simple, the only thing I that was tricky to find was chilis in adobo sauce. My local neighborhood store carries them but Trader Joes doesn’t. You can use any type of tortilla that you want, I opted for these low carb ones from LaTorilla Factory, delish!
Here are the rest of the ingredients and the recipe…
- 1 lb lean ground turkey
- 15.5 can black beans, drained
- 4.5 oz can chopped green chiles
- 14.5 oz can diced tomatoes
- 2 cloves garlic
- 1/4 cup chopped onion (optional if you like onions)
- 1-2 tsp cumin
- 1/8 tsp chili powder
- salt
- 8 (6-inch) tortillas
- 1 cup reduced fat shredded mexican cheese blend
- 1 tablespoon canola oil
- For the Enchilada Sauce: 2 garlic cloves, minced, 1-2 tbsp chipotle chiles in adobo sauce, 1-1/2 cups tomato sauce, 1/2 tsp chipotle chili powder, 1/2 tsp ground cumin, 3/4 cup fat free chicken broth, kosher salt and fresh pepper to taste

I used 2 small baking dishes and baked 4 enchiladas in one and put the other 4 in the freezer for another night. They are really filling with the beans, turkey, and high fiber tortillas so 2 per person was more than enough. I was a little worried that the frozen enchiladas would thaw out very well but they turned out great, tasted like I had just made them fresh that night.
The filling is really hearty and the smokey flavor will fill your kitchen while you are cooking.
