I love substituting whole wheat flour for regular flour when I bake but I had to learn the hard way that you can’t just do a straight swap, you need alter the recipes bit for the best results. I remember when I tried to make my homemade pretzels with whole wheat flour without altering the rest of the recipe and they were hard as rocks! One of my favorite whole grain recipes sites is Joseph’s Grainery. They share the best recipes using their whole grain products and take fabulous photos of their food.
I made these whole wheat chocolate chip cookies with Joseph’s Grainery hard red wheat flour and they were so delicious, they were more filling than a tradition chocolate chip cookie and the whole grain made me feel less guilty for indulging.
Here is the recipe:
Ingredients
3 c Joseph’s Grainery Hard Red Whole Wheat Bread Flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
2 sticks cold unsalted butter, cut into 1/2 inch pieces
1 c brown sugar
1 c sugar
2 eggs
2 tsp vanilla extract
8 oz chocolate chips
Directions
Preheat your oven to 350 degrees.
In a large bowl, sift together the dry ingredients.
In the bowl of your mixer, using your paddle attachment, blend the butter and sugars for about 2 minutes. Scrape down the sides of the bowl with a spatula.
Add the eggs one at a time and then the vanilla. Add the flour mixture to the bowl and blend on low until the flour is barely combined.
Add the chocolate and mix on low until the chocolate is evenly combined.
Scoop dough into balls about 1 Tbsp in size and place on a greased cookie sheet, leaving about 2 inches between the cookies. Bake for 16 minutes.
