I hope you all had a wonderful Thanksgiving weekend! Chris had surgery on his nose last week (he had a deviated septum and turbanate repair) so we really laid low over the holiday. Everything went smoothly and he is starting to look and feel more like his old self.
We opted to stay home for Thanksgiving, I originally planned on ordering a small dinner from Whole Foods but after I looked at their pricing I decided it would be best if I made everything myself and I am glad I did because at the last minute we ended up having 2 dinner guests, our friends Ken and Kai. Chris always makes fun of me at Thanksgiving because I make enough food for an army (I will admit I bought a 5 pound bag of potatoes for just the two of us, never hurts to have left overs) but in this case it worked out, we ended up with enough leftovers to send a bunch home with our friends and enjoy over the rest of the weekend. I stuck to a traditional menu, turkey (I opted for 2 Jennie O turkey breasts instead of a whole bird because they are so easy), mashed potatoes and gravy, stuffing, butternut squash, cranberries, and pumpkin parfaits for dessert.
I saw the recipe for the pumpkin parfaits over at “Wright at Home” and I thought they would be perfect for Chris just in case he his face was still sore. The recipe says it makes 8 but I made mine a little larger so I only ended up with 4. Aren’t they pretty?
Ingredients
1 envelope unflavored gelatin (2 1/4 tsp)1/4 cup cold water
1 (15-oz) can pure pumpkin
1/2 cup packed light brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon salt
2 1/4 cups chilled heavy cream, divided
1 1/2 teaspoons pure vanilla extract, divided
20 gingersnap cookies, coarsely crushed
Beat 1 cup cream with 1/2 tsp vanilla until it holds soft peaks, then fold into pumpkin mixture gently but thoroughly.
Beat remaining 1 1/4 cups cream with remaining 1 tsp vanilla until it holds soft peaks.
Spoon about 1/4 cup pumpkin mixture into bottom of each glass, then sprinkle with some of cookies and top with about 2 Tbsp whipped cream. Repeat layers once, ending with cream.
Chill until set, at least 2 hours.
