Renee is guest blogging for me today, she is the mother to two beautiful girls, Evie and Hailey. She is a busy mom and because health and wellness are a big priority for her I asked her to share some healthy children’s recipes.
How many of you mothers out there have trouble getting your children to eat their veggies? Maybe you have children that will eat their veggies but just can’t seem to find fun and healthy snacks. Do I have the solution for you! One of my favorite cookbooks can help you get your little ones to eat their veggies and not even know it. Jessica Seinfeld’s Deceptively Delicious is full of wonderful recipes that disguise veggies in yummy delicious kid friendly dishes.
Some wonderful summertime treats are Graham Cracker Ice Cream Sandwiches, Frozen Yogurt Pops, and Marshmallow Crispy Treats.
Ingredients:
2 cups lowfat plain yogurt
1 cup sugar
1 cup lowfat 1% buttermilk
2 tablespoons lemon juice
Grated zest of 1 lemon
16 lowfat graham crackers broken in half (32 squares)
Shredded coconut (optional)
Directions:
In a large bowl, whisk together the yogurt, sugar, buttermilk, lemon juice, and lemon zest. Put in a small blow, cover, and freeze for 1 to 1 ½ hours, until the mixture starts to thicken.
Next, form the sandwiches, scoop out and then press about ¼ cup of the yogurt mixture between two graham cracker squares. Wrap each in waxed paper and freeze 30 minutes or until firm.
If you would like to add the coconut, put some on a plate and dip all four edges of the sandwich to coat.
Ingredients:
2 cups plain lowfat yogurt
2 cups frozen berries such as strawberries, raspberries, blueberries, or cherries. Thaw in microwave for 1 minute.
½ to ¾ cup confectioners’ sugar
Directions:
Combine the yogurt, fruit, and sugar in a blender or food processor and process until smooth. Pour into popsicle molds and freeze.
Ingredients:
Nonstick cooking spray
1 tablespoon trans-fat-free soft tub margarine spread
1 10 ounce package marshmallows
6 cups crisp brown rice cereal
¼ cup flaxseed meal
Directions:
Coat an 8×8 inch baking pan with cooking spray.
Melt the margarine in a large pot over low heat. Add the marshmallows and stir until completely melted. Remove the pan from the heat.
Add the rice cereal and flaxseed, and stir until the rice is well coated with marshmallow. Press the mixture into the baking dish and let cool before cutting into squares.
These are summer time treats that not only will make your kids ask for more but as a mother they are guilt free to give your children. Those are just a sample of the wonderful recipes you will find in Deceptively Delicious. There are so many more. From breakfast, lunch, and dinner to dessert. Imagine feeding your children Grilled cheese sandwiches made with sweet potato or macaroni and cheese made with cauliflower. You will never have to worry about your children not eating their veggies ever again.
