Over the weekend I made 2 of my favorite things, stuffed mushrooms and a festive fruit tart. After I was done I had half a package of puff pastry left and half a bag of spinach left and thought I should try something new.
I love to get the bang for my buck, especially when it comes to grocery shopping. I am always trying new things. I love it when I can try something new with ingredients I already have on hand so I don’t feel like I wasted time and money on ingredients for a recipe that may or may not turn out well.
So, out of 1 box of puff pastry and one bag of spinach, I was able to made 3 recipes to enjoy over the long holiday weekend, not to shabby! Here is the recipe I tried for the first time…
Ingredients
1/2 17.3-ounce package frozen puff pastry (1 sheet)
10-ounce package frozen chopped spinach, thawed
4-ounces package reduced-fat cream cheese, softened
5 eggs, lightly beaten
3/4 cup shredded cheese (use what you have, I used cheddar and a little bit of italian)
2 to 3 teaspoons of onion powder
Directions
Thaw pastry, using directions on box. On floured counter, roll out pastry sheet to a 12-inch square. Transfer to 9-inch pie plate or quiche dish; press into bottom and up sides. Trim edges, leaving 1/2-inch overhang.
Place spinach in colander; press out liquid. In large bowl, stir cream cheese until smooth; gradually stir in eggs, shredded cheese and onion powder. Stir in spinach.
Pour filling into pastry-lined pie plate.
Bake in a 375° oven for 30 to 35 minutes or until a knife inserted near center comes out clean. If necessary, cover edges of crust with foil to prevent over browning. Let stand 10 minutes before serving.
(I love breakfast for dinner!)

Hi Kuzak's Closet, I think it's the greatest challenge when you can take what you have existing in your kitchen and create something spectacular (especially when giving new life to leftovers). Those stuffed mushrooms are going to have to be a must try for me!

Spincach + mushrooms? Yay, yes please!
A question on the pastry – have you ever made this kind of thing with a ready-made pie crust instead? I've never bought one because I was worried it might be pre-sweetened, for a dessert pie. But I'm not a fan of rolling things out so just thought I'd ask…

Struggler, I haven't tried it with a pie crust because the puff pastry it so easy. You really don't have to roll it out much and it gets so fluffy and flaky, you should try it!
