My sister is a “guest star” on my blog every other week in a post called “Sister Sister.” We write about what we are up to and products and recipes that we love. Last week I asked my readers through the voter poll what they wanted us to write about next. “Recipes” won the vote so we decided we would share out favorite muffin recipes with you this week.
I came across this muffin recipe a couple of years ago when I was really into card making by stumbling upon Becky Higgin’s website. Her website is filled with great photography tips, creative project inspirations, as well as some yummy recipes. Every recipe I have tried so far by her has been outstanding. This recipe for the Pumpkin Chocolate Chip Muffins is super simple and super delish! I have even used my mini-muffin pan to make bite size muffins for my daughters. I hope you enjoy this recipe as much as my family has!
1 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. cooking oil
1/3 c. chocolate chips

This is a Paula Dean recipe, I found it when I was looking for a breakfast treat for my hubby. He loves coffee and bananas so I thought this would be perfect. They are easy to make with simple ingredients and taste great.
Ingredients
1/3 cup melted butter
4 ripe bananas, smashed
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 1/2 tablespoons strong coffee
1 teaspoon baking soda
Pinch salt
1 1/2 cups all-purpose flour
1 cup chopped pecans, toasted or raw
